Pecorino Toscano DOP is also known by the ancient and popular name of Cacio Marzolino, deriving from the production period, which traditionally began in March and continued throughout the spring. Obtained from whole sheep's milk, with the addition of calf rennet. Sliced, it goes well with honey, jam, seasonal fruit and vegetables but also with a simple slice of homemade bread and a glass of Chianti Classico or Chianti Colli Senesi wine.
