Emmental

Emmental is a cooked cheese, produced with partially skimmed, raw or pasteurized cow's milk, which is heated to 30°C and mixed with rennet. The paste is ivory in colour, hard and tenacious, elastic. Emmental is recognizable by its round holes, well developed and visible throughout the smooth and shiny surface. It can be used for both hot and cold dishes, and is excellent if its delicate taste is accompanied by fruit and vegetables, as well as fortified and refined wines.
