Aged throat (also known as guanciale), selected with particular care to complete the Devodier Grandi Sapori Collection. A Classic revisited at its best. Produced with the parts of the cheek and throat of the pig, it is left in the rind and spiced and flavored by hand, thus achieving a very sweet and delicate flavor with a slightly spicy aroma. It can be used and consumed in many ways, such as on homemade bread, hot focaccia and fried polenta, accompanied by a good glass of young, fresh and fruity red wine.
